Yummy!

OK, so here is the recipe for the baked oatmeal that I was talking about in Sophie's birthday post. It is SOOO good, and also very easy. Unfortunately, I can't take credit for it, I just stole it from Allie. Thanks for sharing all your great recipes Allie! Without further ado...

Amish Baked Oatmeal
1 1/2 cups quick oats
1/2 cup sugar
1/2 cup milk
1/4 butter, melted
1 egg
1 tsp. baking powder
3/4 tsp. salt
1 tsp. vanilla extract

warm milk
fresh fruit, optional
brown sugar, optional

Combine the first eight ingredients in a bowl and mix well. Spread evenly into a greased 9x13 pan. Bake at 350 degrees for 25-30 minutes, or until edges are golden brown. Immediately spoon in into bowls and add warm milk. Top with fresh fruit and/or brown sugar if desired.

NOTE: We usually double this recipe to feed our family with a little left over. It will still all fit into one 9x13, and you don't really need to adjust the cooking time. If you like oatmeal, you will LOVE this!
